Amish Potato Cakes

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups leftover mashed potatoes 1 large egg 1 tbsp. Flour 2 tbsp. Cream 1 tbsp. minced onion (if desired) 4 tbsp. oil -- butter or margarine
Combine mashed potatoes, egg, flour cream and onion and mix well. Shape 2-3 tbsp. of mixture into flat cakes. Place oil, butter or margarine into a skillet and heat. Fry potato cakes until golden brown on both sides.
