Tex Mex Stew "From Our Home to Yours" Ozark First Church of the Nazarene 2004
1 1/2 lbs Ground Beef 1 cup Frozen chopped Green and Red Peppers 1 can Black Beans, drained and rinsed 1 can Corn, drained 1 jar Green chiles, diced 1 pkg Onion Soup Mix 2 1/2 to 3 cups Water, divided 1 Tablespoon Cumin 1/2 teaspoon Salt 1/2 teaspoon Oregano 1/4 teaspoon Cayenne Pepper 2 Tablespoons All-purpose Flour
Brown beef in a 5 to 6 quart deep pot over medium heat, about 5 minutes, breaking up the meat with a spoon. leave some larger pieces. Add frozen peppers, beans, corn, chiles, soup mix, 2 cups of the water, cumin, salt, oregano and cayenne. Simmer covered for 10 minutes. Stir 1/4 cup water into the flour in a small cup until smooth. Stir into stes, and cook until thickened, about 1 hour.
