Pecan Butter Balls
Recipe By :Ann Pearlman Serving Size : 0 Preparation Time :0:00 Categories : Ball cookies
Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups pecans 2 cups flour 1 cup butter -- melted 1/2 cup sugar 2 teaspoons vanilla 1/4 teaspoon salt confectioner's sugar
Preheat oven to 325
Chop the pecans in a blender or food processor until you have 2 cups.
Combine all of the ingredients except the confectioners' sugar. Gather the dough in a ball.
With floured hands, shape into one-inch balls, and bake on ungreased cookie sheets. I line my cookie sheets with wax paper or parchment paper and spray them with Pam. Bake for 20 to 22 minutes.
Pull the cookies and papers off the cookie sheet and onto a cooling rack, and let them cool slightly; be sure they are still slightly warm and then gently shake them in a bag with confectioners' sugar. Place them back on the paper and add more confectioners' sugar while they cool.

NOTES : Recipe is from the novel by Ann Pearlman called "The Christmas Cookie Club". In the prologue she defines it as:
"Twelve of us gather with thirteen dozen cookies wrapped in packages. Homemade of course. We each bring a dish to pass around ... and donate the thirteenth dozen to our local hospice"
"Bring copies of the recipe for each of us"
