SLOW-COOKER LASAGNA
Makes 6 servings
This was originally a Weight Watcher's recipe. I have adapted it somewhat.
1 pound ground beef, buffalo or turkey 1 small onion, chopped 1 1/2 cans roasted garlic and onion pasta sauce (I use Hunt's) 1 cup low-fat ricotta cheese 1 1/2 cups shredded part-skim mozzarella or Italian blend cheese 6 uncooked lasagna noodles 1/2 cup shredded Parmesan
Brown meat and onion in a large skillet over medium heat. Add pasta sauce. Simmer 5 minutes.
Meanwhile, in a small bowl, mix together the ricotta and 1 cup mozzarella.
Spoon a third of the meat sauce into a slow cooker. Break 3 lasagna noodles into pieces. Arrange over meat mixture. Top with half of the ricotta mixture. Repeat with another layer of meat sauce, lasagna noodles and ricotta mixture, ending with a layer of meat sauce. Cover and cook on low 4 to 6 hours. Uncover and turn off heat.
In a small bowl, combine remaining 1/2 cup mozzarella and Parmesan. Sprinkle over lasagna. Let stand 5 minutes.
