Quick Chicken Tortas

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 cups shredded rotisserie chicken meat -- chilled 1 cup Pico de Gallo 1/2 tsp. Mexican Blend Seasoning 4 bolillo rolls or soft French rolls 1/2 cup guacamole 6 tbsp. shredded Jack cheese
Stir together chicken, pico de gallo and Mexican seasoning in a small bowl; set aside. Cut each roll in half and bake at 350°F for 5 minutes or until toasty. Spread equal amounts of guacamole on the bottom of each roll and top with equal amounts of seasoned chicken and cheese. Close sandwich and serve. Makes 4 servings.
