Rum Caramel Onion Marmalade 3 onions (julienne) 1/2 cup rum 1/2 cup white vinegar 2 TBS butter (melt in the pan) 1/4 cup sugar 1/4 water (room temp) salt and white pepper to taste Place the onions in the melted butter and place the sugar, rum, and the vinegar in the pan and simmer for 15 mins. Let the water cook out (5 mins) and cool on a plate.
