SCRAMBLED EGGS W/ VEGGIES

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 onion -- thinly sliced Salt and Black pepper 6 eggs 3/4 cup grated sharp cheddar cheese 1/2 cup low fat milk 2 tbs unsalted butter or margarine 1 tsp grapeseed or vegetable oil 1 bell pepper -- seeded, diced 1 potato -- peeled, diced
HEAT oil in a skillet. Add onion, bell pepper and potato, fry until softened and browned. Melt butter in skillet. Whisk eggs and milk in a bowl, add to skillet, season with salt and pepper to taste. Cook, running a spatula around edges and along bottom to prevent eggs from sticking until almost set, sprinkle with cheese, then cover, remove from heat to finish cooking, then SERVE...
