The following is a quick icing for Cookies This works quite well on cookies that are to be shipped as it becomes quite stiff.
1 lg egg white 1/4 ts cream of tartar 1 c. confectioners sugar, sifted AFTER measuring.
Beat egg white until frothy. Add cream of tartar and confectioner's sugar, a little at a time, beating until the mixture forms sharp peaks. This icing dries quickly so keep it covered with a wet cloth until ready to use (it will hold about 12 hours) Pipe the icing onto cookies using various small pastry tubes.
