Old Fashioned Fudge Cookies
"These cookies taste like the old fashioned fudge we used to make."
SERVINGS & SCALING Original recipe yield: 4 dozen
INGREDIENTS 1 cup white sugar substitute 3/4 cup low fat butter, softened 1 egg 2 teaspoons vanilla extract 2 1/4 cups all-purpose flour or low carb flour 1 teaspoon baking powder 1/4 teaspoon sea salt 4 (1 ounce) squares unsweetened chocolate, melted
DIRECTIONS Cream sugar and butter in mixer till creamy. Add eggs and vanilla, beat till well-mixed. Blend in flour, baking powder, and salt. Continue beating until well mixed. Beat in melted chocolate on low speed just until mixed. Shape into slightly flattened balls (rounded teaspoonfuls). Bake on ungreased cookie sheets at 375 degrees F (190 degrees C) for 7-8 minutes or until set. Cool for about a minute, then remove to wire racks to cool.
