MMMMM----- Recipe via Meal-Master (tm) v8.06
Title: CHINESE CHICKEN SALAD

Yield: 6 Servings
3 lb Chicken breasts
2 tb Soy sauce
1 tb Oil
1 tb Sherry
1/4 c Lemon juice
1 ea Garlic clove, pressed
1/4 c Ginger, ground
1/4 c Sesame seed
6 c Lettuce, fine chopped
1 bn Green onions, minced
1 bn Cilantro, fresh
1/4 lb Mushrooms, sliced
1 c Bean sprouts, fresh
3 oz Transucent noodles *
1 c Salted peanuts, chopped
Cherry tomatoes
Lemon slices

1 ts Chinese mustard
2 ts Sugar
2 ts Lemon rind, grated
4 ts Soy sauce
2 tb Lemon juice, fresh
2 tb Sesame oil
6 tb Salad oil
1 tb Peanut butter
Translucent Noodles are available where Oriental foods are sold. Fry
according to directions on package.
Mix together soy, salad oil, sherry, lemon juice, spices. Rub onto
chicken. Place skin side up in covered bakiing dish. Bake for 45
minutes and cool meat in juices. Skin, bone, and shred into thin
strips. Chill.
Toast seasme seed in frying pan over medium heat until golden brown.
In salad bowl arrange chicken meat, lettuce, green onions, cilantro,
tomatoes, mushrooms, bean sprouts and fried noodles. Add seasme
seeds and 3/4 cup of the nuts. Toss with 1/2 cup of the dressing.
Top with remaining nuts. Garnish with tomatos, cilantro and slices of
lemon. Pass additional dressing.
DRESSING
Commbine dressing ingredients in blender until smooth.
