MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Chicken Liver On Muffins Categories: Main dish, Poultry, Easy Yield: 4 Servings 2 sl Bacon 1 lb Chicken livers, halved 2 tb Margarine or butter 1/2 lb Mushrooms, quartered 2 ea Green onions thin sliced * 1 tb All pourpose flour 1/2 tb Dried basil leaves 1/4 c Chicken broth 1/2 c Half and Half (light cream) Salt 4 ea English muffins ** * Use parts of tops. ** Split, toastede and buttered. 1 Cook bacon in large frying pan until crisp and browned. Remove and drain on paper towels. Crumble bacon and reserve it. 2. Brown chicken livers well, about half at a time in bacon drippings. Remove livers form pan and reserve them. Add butter to the same pan. In it cook mushrooms and green onions, stirring until mushrooms brown slightly. 3. Mix flour into mushrooms, sprinkle with basil. Remove form heat. Gradually mix in chicken broth and half and half. return to heat, cook (stirring constantly) until thickened. Mix in livers and cook, stirring occasionaly over medium heat just till livers are heated through. Add salt as needed (to taste) 4. Serve chicken liver mixture over english muffins, sprinkleing with reserved bacon. Serve with Lettuce and tomato salad and a melon wedge for dessert. JJ 032702.2314.16 MMMMM
