Garlic, White Cheddar and Chipotle Mashed Cauliflower
Serves: 10
Carbohydrates Per Serving: 5 Preparation Time: 25 minutes Difficulty: Easy
Ingredients: 36 Garlic cloves 1/3 C Olive oil 5 lbs Cauliflower, broken apart, stems removed 3 C (packed) Grated sharp white cheddar cheese 4 ozs Cream cheese, room temperature (low fat) 1/4 C (1/2 stick) Unsalted butter, room temperature (low fat) 1-1/2 t Minced canned chipotle chilies Salt/pepper to taste 1/4 t Xanthan gum
Cooking Instructions: Preheat oven to 350 degrees F.
Toss garlic with oil in baking pan. Cover with foil; bake 30 minutes. Uncover; bake until garlic is tender, about 15 minutes. Cool; peel and chop.
Cook cauliflower in large pot of boiling salted water until tender. Drain very well. Transfer cauliflower to large bowl. Add garlic and remaining ingredients. Blend ingredients. Using food processor, process mixture a little at a time until thick and smooth. Season to taste with salt and pepper.
