Southwestern Meatloaf

Amount Measure Ingredient -- Preparation Method

2 pounds ground chuck
1 cup crumbled tortilla chips
1/3 cup taco sauce
2 tablespoons taco sauce
2 tablespoons taco seasoning
1 egg -- lightly beaten
1/2 cup grated cheddar cheese
1/2 cup ketchup
Combine ground chuck, chips, 1/3 cup taco sauce, seasoning, egg, and cheese. Press into 9 x 5 x 3 loaf pan.
Bake 1 hour at 325F.
About five minutes before end of baking time, combine remaining ingredients and spread over top of meatloaf. Continue baking until internal temperature reads 175F.

Steak And Onion Spring Rolls

4 ounces rump steak -- slice
3 tablespoons teriyaki sauce
2 spring onions w/ 3" of stalk
Cut onions in half lengthwise, the cut into 4" pieces.
Place the steak between sheets of grease-proof paper and pound into 1/8" thickness.
Cut the steaks in half crosswise. Arrange the strip of onions down the length of each piece of meat. Starting with the wide end, roll into tight cylinders.
Secure with toothpicks.
TO COOK:
Preheat grill.
Dip rolls in Teriyaki sauce and grill them 3" from heat for 3 minutes.
Dip again in sauce and grill for another 3 minutes. Remove toothpicks, trim ends, and cut into 1" pieces. Stand each piece on end.
