MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Chicken Italiano Categories: Poultry, Main dish Yield: 4 Servings 2 1/2 lb Chicken, boiler/fryer cut up 2 tb Vegetable oil 2 ts Salt 2 ts Paprika 16 oz Stewed tomatoes (1 can) 12 oz Vacume pkd corn whol kernel 1/4 c Water 1/2 c Onion, chopped 1/2 ts Oregano, ground 1/4 ts Coriander, ground (optional) 1 Crushed garlic clove 1/2 c Uncooked regular rice 1 1/2 c Zucchini cut into 1/4 inch Slices Brown chicken pieces in oil in Dutch oven; drain. Sprinklw with salt and paprika. Add tomatoes, corn, water onion oregano, coriander and garlic. Heat to boiling, reduce heat. Cover and simmer 40 minutes. Stir rice into liquid in Dutch oven, lifting chicken if necessary; add zucchini. Cover and simmer until rice is done, 15 -20 minutes 4 servings entered by JJ 3/24/02 MMMMM
