Flaky Biscuits

2 cups flour
4 tsp good quality double acting baking powder
5 tbsp sugar
1/2 tsp salt
1/2 tsp cream of tartar
1/2 cup ice cold butter -- well chilled
3/4 cup sweet milk (whole) brought up to room temperature
Preheat the oven to 475 F
Sift together, in a large bowl, flour, baking powder, sugar, salt and
cream of tartar twice. Using two knives in a scissor fashion, cut the
well chilled butter into the dry ingredients until the butter is the
size of small peas. Mix in the milk that is at room temperature only
until the dry ingredients are moistened. Do Not Overmix!!! Form into
a ball, pat out the dough on a well floured board, to 3/4 to 1 inch
thick. Cut into biscuits using a 2 1/2 inch biscuit cutter. Place
on an ungreased cookie sheet
Bake for 10 minutes or until golden brown Makes about 6 to 8 biscuits
depending on the size and thickness of the biscuit
