Pork 'n Bean Chili

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 lbs. pork tenderloin -- cut into 1-inch chunks 1 medium onion -- chopped 1 small green pepper -- diced 3 garlic cloves -- minced 1 can diced tomatoes -- (28 oz) undrained 1 can black beans -- (15 oz) rinse and drained (I use 2 cans) 1 C. beef broth (chicken works just as well) 1 Tbsp. chili powder 1 tsp. ground cumin 1/4 tsp. ground red pepper (optional) salt and pepper to taste
In a soup pot, saute the pork over high heat for 8-10 minutes. Add the onion, green pepper and garlic and saute for 5 minutes. Add the remaining ingredients, mix well and bring to a boil. Reduce heat to medium-low and simmer for 30-35 minutes.
