Southern Corn Bread:

1 C. Flour
1 C. Yellow Corn Meal
1/4 C. Salad Oil
2 Eggs
2 Tsp n. Salt
4 Tsp n Baking Powder
1/4 C. Sugar.
Beat for 1 Min. until smooth (you'll have a few
little lumps but that's ok). Pre Heat oven 375*. In a 8x8x8x2 pan Coat sides and bottom of your pan
with Lard or Pam. Add your batter and bake. (Option: 350* 30 40 Min.) but watch your cornbread as
so you don't burn the sides. For doneness do as you would do for cake. Take a tooth pick and insert
it in the middle of the cake for doneness. Remove from the oven then coat the top with butter or
Oleo. I like mine with butter on the sides to. Hot or cold it's excellent and i'll have with stew or
chilli. My dad would have his with buttermilk or crumbled in his buttermilk or milk.
