PA. Dutch Hot Bacon Dressing

6 slices bacon - diced
1/3 cup granulated sugar
1/4 cup cider vinegar
1/4 cup flour
1 egg
1/2 tsp. salt
2 cups water
few drops of yellow food color
3 hard-cooked eggs - chopped
Brown bacon, set aside. Mix flour, sugar, egg, salt and vinegar gradually. Mix until smooth. Add water. Pour in pan with bacon and bacon drippings. Add food color. Stir constantly on medium burner until it thickens. Place chopped lettuce in individual salad bowl; place hard-boiled egg on top. Spoon dressing over salad and serve.
VARIATIONS:
Serve with endive or hot cabbage slaw. To serve with dandelion, pour hot dressing on top and stir. Add 3 chopped eggs.
