Chocolate Peanut Brittle

Ingredients:
1/4 cup cocoa
1 teaspoon baking soda
1 tablespoon butter
1/2 cup light corn syrup
1/4 cup whipping or heavy cream
1 cup sugar
1 1/4 cups dry roasted or salted penauts
Preparation:
Combine cocoa and baking soda in small bowl. Place butter on top.
Set aside. Lightly grease or butter a cookie sheet. Set aside. Make
sure candy thermometer and wooden utensils to spread candy are easily
accessible. In a heavy saucepan, heat together sugar, corn syrup and
whipping cream. Once sugar has melted add peanuts. While cooking be
sure to stir frequently until candy reaches 300 degrees F. on thermometer
or hard crack stage.
Remove from heat and stir in small bowl of ingredients. Quickly pour
Chocolate Peanut Brittle onto prepared cookie sheet. Spread with wooden
utensils until 1/4 inch thick. Once completely cool, break Chocolate
Peanut Brittle into pieces and store in an airtight container. Makes
approximately 1 pound.
