Baked Mustard Chicken

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 broiler-fryer chickens -- quartered 2 tsp. salt 1/2 cup prepared mustard 2 Tbs. vinegar 2 Tbs. water 2 Tbs. salad oil 1 tsp. dried leaf thyme 1/4 tsp. ginger
Sprinkel chicken on both sides with salt. Place skin side up in foil-lined shallow baking pan. Mix together mustard, vinegar, water, oil, thyme and ginger. Spoon over chicken. Bake at 375 for 50 to 60 minutes. Makes 8 servings.
