Peanutty to the Max Cookies

1 1/2 cups flour
1 cup sugar
1/2 tsp. baking soda
1/4 tsp. salt
1/2 cup shortening
1/4 cup maple syrup
1 Tbs. milk
1/2 cup creamy peanut butter (extra for filling)
Crushed peanuts for topping
Combine flour, sugar, baking soda and salt. Cut in shortening and
peanut butter until mixture clumps like pie crust. Blend in syrup and
milk. Mix thoroughly. Shape dough into long roll 2" in diameter.
Chill. Mark dough into 24 pieces with knife. Slice cookies 1/8"
thick. Place 12 cookies on cookie sheet 2" apart. Put 1/2 tsp. of
the peanut butter in middle of cookie. Place another cookie on top
and crimp edges by pressing with tines of fork to seal. Place a few
crushed peanuts on top of each cookie. Bake about 12 minutes at 350
until golden. Don't overcook. Yield: 12.
