TONY'S ROAST TURKEY
Everybody knows how to roast a turkey, but very few people know how to season a turkey to
bring out that real turkey flavor: juicy, tender and flavorful. The secret is in the
seasoning and the seasoning is Tony's Famous Creole Seasoning.
----------------------------------------------------------------12 to 14 lb. turkey
2 to 3 Tbsp. Tony's seasoning
2 strips bacon
1/2 (10 oz.) jar currant jelly
1 c. basic vegetable mix (recipe below)
8 oz. can mushroom stems and pieces
2 sticks margarine or butter
1 c. chicken stock or broth
1 c. onion tops and parsley, chopped
Season turkey inside and out generously with Tony's seasoning. Place 1 cup vegetable mix
and 1 stick margarine inside turkey. Place turkey in baking pan, cover turkey breast with
bacon strips, pour the chicken broth, half inside turkey and the other half in bottom of
baking pan. Cover. Place in 300 degrees preheated oven and bake 3 to 4 hours, steaming
until tender. Remove cover, pour off pan juices, set oven to 500 degrees and brown. Watch
closely, it takes only 10 minutes. To the pan juices add 1 cup onion tops and parsley
chopped fine. Use the juice of a large 8 ounce can of mushroom stems and pieces and add 2
tablespoons instant roux and gravy mix. Mix and add to pan juices. Cook for 5 minutes until
juice thickens into a beautiful brown gravy.
Basic Vegetable Mix:
1 onion
1/2 bell pepper
2 sticks celery
1 clove garlic
Run vegetables through blender or meat grinder. Makes 1 cup.
