Turkish Grated Carrot Salad - 2 pts; 13g Carbohydrate; 3g Dietary Fiber

Amount Measure Ingredient -- Preparation Method -------- ------------ ----------------------------------- 5 cups shredded carrots -- peeled 2 tablespoons extra-virgin olive oil 2 garlic cloves -- crushed coarse salt -- to taste 1 cup whole milk yogurt -- preferably sheep's milk 3 tablespoons minced fresh mint
Put carrots in a colander. Pour boiling water over and drain well. Put in a bowl. Mix with
oil.
Mash garlic with salt. Stir in yogurt. Fold into carrots. Garnish with mint and serve.
Yield 6 servings.
