Shells With Beef Sauce

1 pound lean ground beef
1 small onion -- finely chopped
1 teaspoon minced garlic
1 can Italian-Style tomatoes -- (35 ounces) drained (save the juice for soup)
3 tablespoons tomato paste
1 tablespoon minced parsley
1 1/2 teaspoons dried basil
1/2 teaspoon dried oregano
1 teaspoon salt
1/4 teaspoon pepper
1 pound medium shells
Parmesan cheese -- freshly grated
In a large skillet, stir-fry beef over high heat until just brown, about
5 minutes. Drain off fat. Return 2 tablespoons fat to the pan. Add onion
and garlic. Sauté 2 minutes. Add remaining ingredients, except shells and
cheese, and cook over medium heat, uncovered, stirring occasionally, for 15
minutes. Cook shells according to package directions. Toss beef sauce with
shells. Pass grated cheese at the table.
