Nectarine Delight Recipe #30788

6 large ripe west virginia nectarines -- pitted and
sliced (6 to 7)
3/4 cup granulated sugar
2 tablespoons all-purpose flour
1 egg
1 egg yolk
3/4 cup heavy cream
Toss nectarines with sugar and flour.
Place in 13 x 9 x 2 inch baking dish coated with non-stick cooking
spray.
Beat together egg and egg yolk; whisk into cream.
Pour mixture over nectarines.
Bake in preheated 425 degree oven for 10 minutes.
Reduce oven temperature to 350 degrees and bake for 35 to 40 minutes.
Remove from oven and cool.
Serve warm or at room temperature.
Garnish with fresh mint.
Peaches can be substituted for nectarines (peach skin should be
removed).
