Pork Chop Dinner
DELICIOUS! Thai (my husband) raved about this one. This is a wonderful and simple meal-in-one. I made this with a lot more potatoes and carrots, and a few more pork chops for some great left overs. I also used red potatoes instead of regular potatoes, cutting them in bigger chunks than cubes.

Serves: 4
6 - 8 medium carrots (1 pound), sliced 3 - 4 medium potatoes, cubed 4 boneless pork loin chops (3/4 inch thick) 1 large onion, sliced 1 envelope onion soup mix 2 10 3/4-ounce cans condensed cream of mushroom soup, undiluted
Place carrots and potatoes in a slow cooker. Top with the pork chops, onion, soup mix and soup. Cover and cook on low for 6-8 hours or until meat and vegetables are tender.
