Mexicali Eggs

Amount Measure Ingredient -- Preparation Method

4 Flour tortillas -- 6 inch
4 oz Canadian bacon -- diced
7 1/2 oz Whole tomatoes -- cut up
1/3 c Chopped onion
1/4 c Green chili peppers diced And drained
1 Garlic clove -- minced
1/8 t Salt
4 Eggs
1 oz Shredded cheddar cheese
Brush one side of each tortilla with water to soften. Press each
tortilla, brushed side up, into a 10 ounce custard cup or individual
casserole. Bake at 400 F. for 5-7 minutes or until crisp. Sprinkle
bacon in tortilla cups.
Meanwhile for sauce, in a medium skillet fombine UNDRAINED tomatoes,
onion, green chili peppers, garlic and salt. Bring to boiling, reduce
heat. Cover and simmer 5 minutes.
Break one egg into saucer or custard cup. then pour into simmering
sauce.
To add eggs to sauce break one egg at a time into a custard cup or
small bowl. Then, holding the lip of the dish as close as possible
to the sauce as possible, carefully slide the egg into the simmering
sauce. Be careful not to break the yolks as you slip them into
skillet. Space egge evenly in sauce. Cover and simmer for 5 minutes
or till eggs are just set.
Spoon some of the sauce and one egg into each tortilla cup, sprinkle
with cheese. Let stand 1-2 minutes or til cheese begins to melt.
