MEXICAN LASAGNA

Amount Measure Ingredient -- Preparation Method

1 lb. ground beef
1/2 c. chopped onion
1 can tomatoes -- (16 oz.) cut
up and drained
2 c. cottage cheese
2 eggs -- beaten
6 oz. lasagna noodles -- cooked
and drained
1 lb. Velveeta cheese -- sliced
1 can tomato paste -- (6 oz.)
Brown meat. Drain. Add onion. Cook until tender.
Stir in tomatoes and tomato paste. Combine cottage cheese and
eggs. Place 1/2 of noodles in 12 x 8-inch baking dish. Top
with 1/2 of cottage cheese mixture, meat mixture and Velveeta
cheese. Repeat layers of noodles, cottage cheese and meat
mixture. Bake at 350 degrees for 45 minutes. Top with Velveeta
cheese. Continue baking until cheese begins to melt. Makes 6
to 8 servings.
