Sweet Potato Pecan Pie

Amount Measure Ingredient -- Preparation Method

1 lb. yams or sweet potatoes -- cooked and peeled
1/4 cup butter or margarine
1 can sweetened condensed milk -- (14 oz.)
1 tsp. ground cinnamon
1 tsp. grated orange rind
1 tsp. vanilla extract
1/2 tsp. ground nutmeg
1/4 tsp. salt
1 egg
9 inch graham cracker crust
TOPPING:
1 egg
2 Tbs. dark corn syrup
2 Tbs. brown sugar
1 Tbs. butter -- melted
1/2 tsp. maple flavoring
1 cup chopped pecans
Heat oven to 425. With mixer, beat hot yams and butter until smooth.
Add remaining ingredients except crust and topping; mix well. Pour
into crust. Bake 20 minutes. Meanwhile, make Pecan Topping. Remove
pie from oven; reduce oven to 350. Spoon Pecan Topping on pie. Bake
25 minutes longer or until set. Cool. Serve warm or at room
temperature. Garnish with orange zest twist, if desired. Refrigerate
any leftovers.
Pecan Topping: Beat together egg, corn syrup, brown sugar, melted
butter and maple flavoring. Stir in chopped pecans.
