Recipe Name: Baked Fish Casserole

Ingredients: 4 c. cabbage, shredded 1 c. onion, sliced 1/2 c. carrot, thin sliced 1 clove garlic, fine chopped with 1/2 tsp.salt 12 oz. halibut, boned, cooked chunks 2 tbs. margarine 2 tbs. enriched flour 1 c. skim milk 2 oz. Cheddar Cheese, sharp 1/2 tsp. SALT 1 tsp. Parsley, fresh chopped Dash White pepper Dash Ground Allspice
Instructions: Spray skillet with non-stick cooking spray; add cabbage, onions, carrot slices and garlic.. Cover and cook over low heat until cabbage is wilted and carrot is tender. Transfre vegetables to 2 quart casserole that has been sprayed with nonstick cooking spray. Add fish and stir gently to combine.
Preheat oven to 350F. Melt margarine in small saucepan, add flour and cook over low heat for 2-3 minutes stirring costantly. Add milk gradually, stirring briskly with wire whisk; continue to stir briskly untill the sauce has thikened and cheese melted.
Combine sauce with vegetables and fish in casserole, sprinkle with parsley. Cover and bake 30 minuts.
