Ingredients: 1 tsp margarine 1 tbs minced shallots 1/2 c. chopped mushrooms 2 tbs minced celery 1 tbs chopped pimento 1 tsp lemon juice 1/4 tsp. salt 1 tbs chopped fresh parsley 2 tbs reduced calorie mayonaise 1/2 thp prepared mustard 12 oz sea trout fillets or boned rainbow trout
Instructions: Melt margarine in small non-stick skillet; add shallots and saute briefly, being careful not to burn. Add mushrooms, celery, pimento, lemon juice and salt; saute until tender. Remove from heat and stir in parslety, amyonnaise and mustard.
arrange fillets in baking pan. Spread vegetable mixture oe fillets and bake at 400 F. for about 20 minutes or unil fish flakes easily when tested with fork.
