Recipe Name: Spinach Lasagna w/Basil Marinara Sauce

Ingredients: Basil Marinara Sauce 1 pkg Lasagna noodles 1 pkg. Spinach, frozen, chopped 1 pkg, Mozerella cheese (alpine lace sugstd) 1 tub Ricotta Cheese, fat free 1/2 c. Parmesan Cheese 1 tsp. nutmeg
SAUCE INGREIENTS 2 14.5 oz cans tomato sauce ( 29 0z) 1 lg cn Peeled tomatoes (or chopped) 6 oz Tomato paste (1 can) 1 bunch green onions 1 pkg. mushrooms, fresh 2 tbs White cooking wine 1 tbs Parmesan Cheese 3 cloves Garlic, crushed basil, fresh or chopped oregano salt (to taste) peper (to taste)
Instructions: Cook noodles according to package directions, Set aside on foil to cool Cook spinach in skillet with nutmeg until warm and set aside. Mix cheeses with egg whites, add salt and pepper to taste and set aside. Pour Marinara sauce on bottom of baking dish. Layer in this order: Noodles, spinach, ricotta cheese mixture and repeat layers pouring rmaining sauce over top. Bake at 375F. for 30-45 minutes or until bubbly. Let stand for 15 minutes.
DIRECTIONS FOR SAUCE
saute green onions and mushrooms, and garlic in white cooking wine until tender. Add tomato sauce, whole tomatoes and tomato paste, mixing thoroughly. Add spices and stir thouroughly, let simmer 20-30 minutes sprinkle with parmesan cheese
