Grilled Mackerel With Chopped Tomatoes

6 mackerel fillets - (5 oz ea)
3 teaspoons fresh lemon juice
1/4 teaspoon freshly-ground black pepper
1/2 teaspoon crumbled dried oregano
2 cups chopped fresh tomato
1/2 cup chopped fresh parsley
Arrange mackerel pieces in a shallow baking pan. Combine lemon juice, pepper, and oregano; sprinkle over the fish.
Grill mackerel over medium-hot coals about 3 to 4 minutes on each side, depending on the thickness of the fish. Fish is done when it flakes easily when tested with a fork. (This recipe may also be prepared in an oven broiler.)
Place mackerel on individual serving dishes. Combine tomato and parsley and spread decoratively around and over the mackerel. Serve fish hot.
This recipe yields 6 servings.
