MUSTARD-BAKED EGGS Senapsgratinerade ägg
Serves 4
6 to 8 eggs
Mustard sauce: 2 tbsp butter or margarine 4 tbsp flour 1 3/4 cups milk 2 tbsp mustard of your choice dash white pepper 4 slices streaky bacon 4 tbsp strong, grated cheese
Heat the oven to 475F.
Boil the eggs for about 6 minutes. Rinse in cold water and peel them.
Make the sauce. Put butter and flour in a small, heavy-bottomed saucepan and sizzle it together. Dilute with milk, little by little, to a smooth sauce. Let boil for 4 to 5 minutes.
Shred the bacon and quickly sauté them in a dry, heat frying pan.
Grease and oven-proof dish. Split the eggs and put them on the dish. Pour on the sauce and sprinkle with bacon. Sprinkle with grated cheese. Bake for about 10 minutes on the highest shelf until lightly colored, the cheese has melted and the dish is heated through.
Serve immediately with e.g. toast or baguette and a fresh green salad.
