Fig-Apple Crostada

For the pastry:
1 Cup all-purpose flour
2 TBSP granulated sugar
1/4 tsp sea salt -- finely chopped
1 stick cold unsalted butter -- very cold, sliced
2 TBSP ice water
For the filling:
1 1/2 lbs golden delicious apples
1/4 Cup fig jam or preserves -- good quality fig jam or preservatives (1/4 to 1/3)
1/8 Cup granulated sugar
1/2 stick cold unsalted butter -- diced
For the pastry, place the flour, sugar, and salt in the bowl of a food processor fitted with a steel blade. Add the butter and pulse until the butter is the size of peas. With the motor running, add the ice water all at once through the feed tube. Keep pulsing to combine, stopping just before the dough becomes a ball. Turn the dough onto a well- floured board and form into a disk. Wrap with plastic and refrigerate for at least 1 hour.
Preheat oven to 450 degrees F. Remove the dough from the refrigerator. Flour a rolling pin and roll the pastry into an 11-inch cricle on a lightly floured surface. Transfer the dough to a baking sheet.
For the filling: peel, core, and cut the apples in about 10 even sections. If the fig jam is thick, heat it until it begins to melt. Toss the apple sections in the jam.
Cover the tart dough with the apple wedges leaving a 1 1/2 inch border.
Sprinkle the apples with the sugar. Cut the butter into smaller pieces and place around the top of the crostada.
Gently fold the border over the apples to enclose the dough, pleating it to make a circle.
Bake the crostada fro 20 to 25 minutes, until the crust is golden and the apples are tender.Serve with a scoop of vanilla ice cream.
