I haven't made these in along time but intend to again. I have posted this around before...but it's worth repeating, especially at holiday time. (They are yummy...but low-fat!!)
My Old Comments:
I made these last night and it made a big pan of them...but they are 1/2 gone now!!! They taste like a gingerbread boy/girl and I can't tell they are lower fat than most bars because they are very GOOD. Thanks Ellen, it's a keeper. PS: Only thing I did extra was to sift a bit of confectioners' sugar over the top. Pretty.
BTW: Elf is Eat-LF mailing list (low fat).

Serving Size : 20 Preparation Time:
Categories : Cookies & Bars
Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 1/3 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 tsp ground cinnamon
1 tsp ground allspice
1/2 tsp freshly grated nutmeg
1/4 tsp ground cloves
1/2 cup dark molasses
3/4 cup packed light brown sugar
1/4 cup vegetable oil -- preferably canola
1/4 cup apple butter
2 large eggs
1 1/2 cups raisins
1. Preheat oven to 350 degrees. Lightly oil a 9 by 13-inch baking dish or
coat it with nonstick cooking spray; set aside.
2. In a small bowl, whisk together flour, baking powder, baking soda, salt,
cinnamon, allspice, nutmeg and cloves. In a large bowl, beat together
molasses, brown sugar, oil, apple butter and eggs with an electric mixer
until smooth. Add the dry ingredients and beat on low speed just until
combined. Stir in raisins.
3. Transfer the batter to the prepared baking dish; smooth the top. Bake for
20 to 25 minutes, or until the batter feels "set" when lightly pressed in
the center.
4. Let cool in the baking dish on a rack. Cut into 20 bars. Store at room
temperature in an airtight container.
5. Makes 20 bars - 155 calories per bar, 3g fat
6. BRENDA'S NOTES: Very good. I sprinkled top with confectioners' sugar
after they'd cooled just a bit. A keeper. They don't taste low-fat -- just
good!! (Originally posted to Eat-LF May 2002 by a friend named Ellen C. )
