Blackberry Cobbler - 70 grams

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 cups blackberries -- fresh 1 1/4 cups sugar 1 teaspoon lemon juice 1 cup all-purpose flour -- sifted, PLUS 2 tablespoons all-purpose flour -- sifted 1/4 cup melted butter -- plus extra 1 large egg -- beaten 2 teaspoons baking powder 1/2 teaspoon salt 1/4 cup milk light cream
Preheat oven to 375°.
Mix berries, 1 cup of the sugar, lemon juice,and 2 tablespoons of the
flour. Spread over the bottom of a well-greased deep pie dish and dot
with butter.
Combine egg, melted butter and remaining 1/4 cup of the sugar. Sift
cup of flour together with baking powder and salt. Sift again. Stir a
little at a time into egg mixture until well blended. Stir in milk.
Spread over berries.
Bake for 30 minutes or until batter is puffed and golden. Serve warm
with light cream.
