Tropical Vinaigrette

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 tablespoons fresh lime juice 1/2 teaspoon Dijon mustard Salt and pepper -- to taste 1/2 cup olive oil 1/2 teaspoon minced shallots 1 teaspoon finely grated lime zest
Whisk together the first 3 ingredients. Slowly drizzle in the oil, whisking constantly, until thickened. Stir in the shallots and lime zest.
Yield: 3/4 cup. Per tablespoon: 82 calories, 0.5 g carbohydrates, no protein, 9 g fat, no cholesterol.
