Curried Apple Coleslaw

5 cups shredded green cabbage -- (1/2 medium head)
1/4 cup grated carrot -- about 1 large
2 Granny Smith apples -- peeled, cored, and grated
2 scallions -- chopped
1/3 cup golden raisins
2 tablespoons chopped fresh mint
1/2 cup light mayonnaise
2 tablespoons apple juice
2 teaspoons madras curry powder
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
In a large bowl, combine the cabbage, carrot, apples, scallions, raisins
and mint. In a separate bowl, combine the mayonnaise, apple juice, curry
powder, salt, and pepper. Add the mayonnaise mixture to the cabbage
mixture and combine well. Let stand for 10 minutes before serving.
