Cucumber Dill Salsa - 1g Carbs, 0g Fiber, 0g Sugar
From: Healthy Cooking For Diabetes from Davita
Portions 2 Serving Size: 1/4 cup
1/4 cup cucumber, diced 1/2 tsp lemon juice 3 Tbsp reduced-fat sour cream 1 tsp fresh dill weed, chopped 1 tsp red onion, diced 1/2 tsp prepared horseradish
1. Place diced cucumber in a small bowl and toss with lemon juice. Set aside.
2. Combine sour cream, dill weed, onion and horseradish in a small bowl.
3. Gently mix the cucumber into the sour cream mixture.
4. Refrigerate until ready to serve.
