SLOW-COOKER "BAKED" APPLES WITH CHERRY- WALNUT FILLING
4 firm apples 1/4 cup dried cherries 1/4 cup chopped walnuts 1/4 cup brown sugar 2 tablespoons flour 2 tablespoons butter, divided in half and cut in bits 1/2 teaspoon cinnamon 1/3 cup pomegranate juice
1. Peel top half of each apple and remove core, leaving the bottom of the apple intact. Run the tines of the fork around the peeled part of each apple in a decorative pattern. Place the apples in a single layer in the bottom of the slow cooker.
2. Combine cherries, walnuts, brown sugar, flour, 1 tablespoon of butter and the cinnamon. Fill the cavities of the apples loosely with the mixture, and sprinkle any remaining over the top. Dot the apples with the remaining butter. Pour the pomegranate juice around (not over) the apples.
3. Turn slow cooker to low and cook for 6 to 8 hours, until apples are tender. Makes 4 servings.
