Puerco Asado -- Spanish Rancho Roast Pork
Shows Puerto Rican influences.
Ingredients: 4 to 5 lb pork roast, any cut 1 cup of water or so 1/2 cup piloncillo or packed brown sugar 1 to 2 tsp oregano 1 bay leaf Juice of one lemon 1 tsp dry or 1 Tbsp fresh thyme 1 tsp dry or 1 Tbsp fresh marjoram 1 large onion, sliced thin 3 to 4 cloves garlic, minced salt to taste 4 to 8 oz red chili 1/2 to 1 tsp cinnamon 1/8 to 1/4 tsp ground cloves 1 tsp cumin
Method: Rinse meat and chop into more or less big bite size pieces. Cook to brown some in a large pot using a little water to help meat remain juicy. Add the piloncillo or brown sugar and the oregano. Simmer until there is very little water. Add the rest of the ingredients and cook at a simmer covered for an hour or so the uncover and simmer to reduce juices to a gravy. Serve with beans and rice.
