Hawaiian Strawberry Pie
2 cups sliced fresh strawberries 1 Keebler graham cracker piecrust, 6 oz 1 pkg. sugar free strawberry gelatin, 4 serving size 1 pkg. sugar free vanilla cook and serve pudding, 4 serving size 1 cup crushed pineapple packed in fruit juice, 8 oz, drained and 1/4 cup liquid reserved 1 1/4 cups water 1 tsp. coconut extract 1 cup Cool Whip Lite 2 Tbsp. flaked coconut
Evenly arrange strawberries in pie crust. In medium pan, mix dry gelatin, dry pudding mix, reserved pineapple liquid, and water. Cook over medium heat until mixture thickens and starts to boil, stirring often. Spoon hot sauce mixture evenly over strawberries. Refrigerate for at least 1 hour. In medium bowl, mix drained pineapple and coconut extract. Add Cool Whip Lite. Mix gently to mix. Spread topping mixture evenly over set strawberry filling. Sprinkle coconut evenly over top. Refrigerate for at least 1 hour. Cut into 8 pieces. 187 calories per serving Dessert Every Night
