DUTCH APPLE CAKE (sugar-free)
Shortcake Dough 1 egg, lightly beaten 4 York or Cortland Apples 3 tbsp. frozen unsweetened apple juice concentrate, thawed 1/2 tsp. ground cinnamon
Preheat oven to 400 Degrees F. Butter an 8-inch square cake pan.
Prepare the recipe for Shortcake Dough but add 1 egg with the 1/2 cup milk called for in the recipe, to make a soft dough. Spread the dough over the buttered cake pan.
Peel and core the apples, then cut each into 8 slices. Toss with the juice concentrate until coated. Arrange the apple slices overlapping in parallel rows on the dough. Sprinkle with the cinnamon. Bake for 30 minutes, or until cake tests done when a pick inserted in the center comes out clean. Serve warm.
