Saucy Parmesan Chicken “This recipe has been in my file for years and I break it out every now and then when I need a quick fix meal. It makes a fast, tasty and moist chicken dish.” Since my family loves spicy foods, the Curry powder lends a unique flavor but can easily be omitted, if you prefer. I usually serve it with a pasta salad and Ciabatta bread.
6 ServingsPrep: 20 min. Bake: 25 min. Ingredients a.. 1/2 cup chopped onion b.. 2 tablespoons butter c.. 1 can (10-3/4 ounces) condensed tomato soup, undiluted d.. 1/3 cup beer or nonalcoholic beer e.. 1/2 teaspoon curry powder f.. 1/2 teaspoon dried oregano g.. 1/8 teaspoon salt h.. 1/8 teaspoon pepper i.. 6 boneless skinless chicken breast halves (7 ounces each) j.. 1/4 cup grated Parmesan cheese Directions a.. In a large skillet, sauté onion in butter until tender. Add the soup, b.. beer, curry, oregano, salt and pepper; bring to a boil. Reduce heat; c.. simmer, uncovered, for 8-10 minutes or until thickened, stirring d.. occasionally. e.. f.. Place chicken in a greased 13-in. x 9-in. baking dish. Pour soup g.. mixture over chicken. Bake, uncovered, at 375° for 24-28 minutes h.. or until a meat thermometer reads 170°. Sprinkle with cheese. i.. j.. Yield: 6 servings. k..
