Beef Taco Cheesy Mac
Taco spices and seasonings are combined and make two all-time favorite dishes so easy, beef tacos and cheesy-mac, into one dish that adults and kids both love. This recipe can be doubled for more eaters.
Ingredients:
1 lb. beef cubed (I used chuck steak) 1 tblsp. vegetable oil 1 medium onion diced 1/4 tsp. salt 1 package taco spices and seasonings 2 cans (14-1/2 to 16 oz.) diced tomatoes, undrained 1-1/2 cups uncooked rotini (spiral) pasta 1/2 cup water 1/2 cup shredded sharp cheddar cheese
Preparation:
1. Cut beef steak into 1” cubes. Heat oil in pot over medium-high heat until hot. Saute beef cubes and onions for about 3-4 mins. Seasoning with salt.
2. Stir in taco seasonings, tomatoes, pasta, and water with the beef mixture. Bring to a boil; reduce the heat to low. Cover and simmer about 20 mins. until pasta is tender.
3. Sprinkle with the cheese before serving
Makes: 4 servings
Serving size: 1-1/2 cups
