Family Beef Stew from The All New Diabetic Cookbook)
1 1/4 lb. top round steak, cubed 1 tbsp. virgin olive oil 1/4 cup all purpose flour 1/8 tsp. pepper 1 garlic clove, minced 3 cups low-sodium vegeetable broth 1 tsp. low-sodium soy sauce 2 cups pared, cubed potatoes 1 cup diced onions 1 cup diced carrots 1 tsp. Italian seasoning Worcestershire sauce
Brown the outside of the round steak cubes in oil. Drain on paper towel.
Combine the remaining ingredients in a large pot and bring to a boil. Lower the temperature to a simmer and cook for 1 hr.
Add the meat and pan drippings to the pot and simmer for 30 more min. The stew is done when the vegetables are tender.
Makes 8 servings.
