Little Railroad Cakes Two cups of powdered loaf sugar, two cups flour, sifted, six tablespoons soft, fresh, sweet butter, two tablespoons of milk, six eggs, one teaspoon of soda, two teaspoons cream of tartar, one teaspoon grated lemon rind, and one teaspoon of lemon juice. Cream sugar with butter, add milk and eggs. Beat well with a wooden spoon. Add flour, soda,cream of tartar, grated lemon rind and juice. Mix well. Turn mixture into a buttered shallow pan, bake in a quick stove for twenty-five minutes or until golden brown. Cool. Sprinkle top thickly with powdered sugar. Cut into two-inch squares.
