CrockPot Florentine Pork Stew 1 cup dried great northern beans 1 (16 ounce) can diced tomatoes 1 cup water 1 small onion, chopped 1 pork roast, marinated in bottled Italian dressing (your favorite) 1 (10 ounce) package frozen spinach, thawed Preparations: The day before you cook this dish, you will need to marinate the roast with the dressing; this is easiest if you use the removable liner from the crock-pot (cover) and refrigerate. Then you will need to start soaking the beans overnight. In the morning you will replace the liner in the crock-pot but remove the roast. Then drain, rinse, and transfer bean to crock-pot; add tomatoes, water, onion then place roast on top in crock-pot Cover and cook on Low for 8-0 hours. During the last 10 minutes remove roast and place spinach in crock-pot and cover. Slice roast and return to crock-pot until spinach is done. If you put the spinach in too soon, it will turn to mush .
