• Scalloped Potatoes Recipe:

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Ingredients 3 tablespoons reduced calorie margarine/butter 3 tablespoons flour 2 cup skim milk 4 large potatoes 1 large onion -- chopped 4 cups shredded reduced-fat cheddar cheese
Cooking Instructions Wash, peel and slice potatoes and set aside. Melt margarine/butter in medium saucepan over low heat. Add flour cook 1 minute, stirring constantly. Gradually stir in milk, cook over medium heat, stirring constantly until thickened and bubbly. Salt and pepper to taste.
Spray a 1 1/2 quart casserole with nonstick cooking spray. Layer 1/2 of potato slices, onion, cheese and white sauce in the casserole. Repeat with remaining ingredients. Cover and bake at 350 degrees for 2 hours or until potatoes are tender.
